The Front Room
While dining in our front room you will be surrounded by the history of Waterford. The room has elements in it that date back to at least the 1460s. It has been identified as the house of the eleven times mayor of Waterford James Rice whose 1481 cadaver tomb is preserved in Christ Church Cathedral and is one of the finest in Ireland.
Ideal for long nights chatting over a delicious meal and a bottle of wine.

The Vault
Come dine with us in our historic and intimate wine vault located beneath the house of the 15th century eleven times mayor of Waterford James Rice. James was also a wine merchant dealing mainly in Spanish wine.
Today you can soak up the atmosphere in this enchanting space. The Vault is ideal as a private dining room for your special occasion, or equally perfect for a romantic meal for two. Call us now to book your table.

Meet the chef
PETER EVERETT
Head Chef
Peter is a Waterford native, having grown up in Viewmount Park on the edge of the city. Peter studied culinary arts in Cathal Brugha street while working with Michael Quinn in Waterford Castle. While under Michael's tutelage, Peter was awarded Eurotoques Young Chef of the Year and has remained active in the organisation ever since. Peter went on to work in Chapter One in Dublin before joining the team at Restaurant Forty One where he worked with Graham Neville as sous chef. Over the years Peter has developed his own style of cooking which reflects his deep respect for high quality produce and the enjoyment of a well cooked meal. Everett's is a result of Peter's long held desire to open his first restaurant back home where it all began. Peter is joined on his journey by co-owner and partner Keith.
